Eva Houghton Board President

Eva, a lifelong resident of Canton, OH, wife, mother, small business owner and President of the Harrisburg Royal Neighborhood Association has been with StarkFresh from its beginning.  

This program participant-turned-volunteer-turned-board president spends her free time with her family and friends enjoying festivals, music and volunteering with Habitat for Humanity.

Eva loves her community and is concerned that people are so nutrient deficient due to the lack of access to food and finances.  

Her passion and the solutions StarkFresh offers to combat those deficiencies are what drives her to lead.

Cathy Brown Vice President

After raising a household of children into adulthood, Cathy spends her energy serving her community through volunteering in programs such as Canton’s Blessings in a Backpack Program.

 Cathy has an accounting background and provides valuable skill and financial expertise to the board.

Cathy’s love for her community and her desire to see it be improved is what drives her to be part of StarkFresh.

Bruce JosephBoard Treasurer

Bruce, the Wellness Online Support and Outreach go-to at AultCare, brings his love of food and good nutrition to the board.  

When he isn’t helping coach clients to healthier eating choices he spends his free time eating & talking about food, traveling, watching movies and getting together with friends as much as he can.  

What he loves most about being on the board is being able to be able to make such a positive impact on the nutrition and education to this community.

Debra Miraglia – Board Secretary

Debra holds a bachelors degree in teaching from East Stroudsburg University and regularly donates her time by serving on the boards of several area agencies, including the Blessings in a Backpack program in Canton, OH .  

When she isn’t spending time with her children, grandchildren or husband, she can be found tending to her gardens at home.

What Debra enjoys most about serving on StarkFresh’s boartd is our commitment to getting food to those who need it most, in a manner that is helping them in both the short and long term, truly making a difference.

Ryan Maxwell – Board Member

After obtaining a Bachelors in Political Science/History from Miami University, Ryan went on to graduate from the College of Law at Northern Kentucky University and received his law license in 2014.  Currently working as an attorney at Community Legal Aid Services, Ryan brings his knowledge of serving those throughout Stark County who live in impoverished communities to the StarkFresh board, where better, more consistent food access is crucially needed.

In his spare time you can find him spending time with his family, coaching youth soccer or enjoying the latest superhero film.

Courtney James – Board Member

After graduating from Kent State University with a Business Management degree, Courtney took a job in the Marketing and Advertising Industry where she does strategic business planning and project development.  

When not working, she enjoys spending time with her family outdoors, preferably hiking or camping. She loves animals and traveling and is passionate about being on the StarkFresh board because she believes that access to food is a basic human right.

 A lifelong Stark County resident, she believes it is our duty to combat hunger within our own community.

Joshua Coon – Board Member

After obtaining a Bachelors in Public Relations from Kent State, years of experience in the film exhibition industry and a lasting reputation in the “undergound” local music scene,  Joshua brings his General Manager skills from Regal to StarkFresh’s board where he serves as a champion for teaching families how to enjoy healthy, delicious meals on a budget.

He doesn’t sew or do arts and crafts but he enjoys spending time with his wife and twin daughters, rooting for the Browns, Indians and Cavaliers and impersonating various celebrity chefs while cooking for the family at home.


Brenda Sarsany – Board Member

Starting with a Bachelors of Science in Biology and ending with a 30-year stint at the Stark County Regional Planning Commission, Brenda has been able to help our community in many ways, including starting The Stock Pile, in Canton.

Now retired, Brenda enjoys volunteering her talents at the Haven of Rest, Jackson Township Recycling Station and a Stark County Probate Court Volunteer Court Angel.  

Being a lifelong gardener, Brenda believes that along with affordable housing, everyone should also have access to affordable, nutrient-dense food and is excited to be helping StarkFresh.

Abby Poeske  – Board Member

Being the Director of Career and Experiential Education at Walsh University, Abby has seen first hand how connecting local nonprofits like StarkFresh to the Walsh students and staff not only has created meaningful academic experiences for students, but continued to create lasting benefits for the community.  

Abby has a Bachelor’s Degree from University of North Carolina-Chapel Hill and an MBA from Walsh University.  After living in or traveling to more than 30 countries, she spends her spare time exploring North East Ohio where she enjoys volunteering at the National First Ladies Library, Girls on the Run and around the Summit Metro Parks.  

She believes that access to healthy, affordable food should be a right and not a privilege.

Rita Baker – Board Member

Rita is the Program Manager at The Stock Pile, a non-profit building material reuse store located in Canton, OH.  In her free time she enjoys adventures with her husband and son and can be regularly found enjoying the local music scene when time allows.

What she loves most about serving on the StarkFresh board is how StarkFresh works hand-in-hand WITH others in the community to provide accessible services and opportunities, effectively helping people help each other and rising up the community, together.

Joy Benjamin – Board Member

Joy is a registered dietician nutritionist for Aultcare and has practiced dietetics for 20 years where she is able to take her lifelong passion of exercise and eating well and be able to make a difference in the community.

When she isn’t working she loves to spend time outdoors with her family, especially in the garden!

She is excited about her role on the StarkFresh board and being able to be part of a larger impact in educating about nutritious food options.
